Two Accounts for a single email

I really don't know how or why, but my dad has 2 accounts set up for email in Mac mail.. but both accounts point to the same gmail account.

They're both IMAP and IMAP is enabled within the gmail settings.

However, they show different emails.. some emails are in one and not the other account.

I'd like to be able to delete one account, but we're scared of 'losing' emails that way. I thought IMAP was keeping all emails on the server and the client was simply displaying server state, but.. is that not entirely true?

I've tried to investigate the issue some and discovered that my gmail account has IMAP disabled despite the fact that Mac mail is using IMAP.. I guess I'm using IMAP to retrieve message data but.. am I missing some functionality if IMAP is disabled?

iMac (Retina 5K, 27-inch, 2017), iOS 12.1, null
