I am trying to re-order an old photo book. It was available on my computer back in February. I've just tried to order it now and seen the extensions app on the computer and now can't seem to find my old photo book. Help! Thanks

Which version of Photos do you have installed? You need Photos 3.0 or Photos 4.0 to order books.
Your old book should still be in the sidebar. In Photos 4.0 it should appear under "My Projects".
Click the book to open it. Then wait. After some spinning of the beach ball you should be seeing two buttons in the toolbar "Create PDF" and "Convert".

Is that true and if so, how? I was told that Motif would be taking over the old Apple Photobooks designs and by late November 2018 (it's now mid-December), you could convert your photobook project and continue as if nothing happened. I have photobooks i do every year for Christmas - I was halfway done (1/2 way through the year) when I got the word of discontinuation of the service. At this point, I can't even open the project to complete it as a PDF to give to family as a symbol of the book to arrive later.
The Mimeo plugin does work and I'm checking that out. It's harder to use than before and the fonts are different alas.
I used to be such a brand advocate for Apple. Stuff like this is really frustrating. To discontinue a lifestyle product without a plan is just stupid. If Android weren't even worse, I'd leave Apple.
