Why won’t IOS 12 show up in my software update?
whenever I go to software update, it says “your software is up to date,” but it still says IOS 11.4.1. What should I do??

Did you participate in the iOS 11 beta program? If you you'll need to delete that profile.
What is the model of your iOS device?

I have this exact problem on an iPhone 7 Plus. I have no option to delete the latest update in my iPhone storage and it is saying I am up to date at 11.4.1
