I'm thinking about putting a Mac mini 2018 behind a monitor in a VESA mount. I was wondering if that (or any vertical orientation) would affect the heat dissipation. Does anybody have some experience/insight on cooling of the 2018 mini in a vertical orientation?

The mini draws air in from the bottom circular vent, and exhausts out the back. So as long as the back is exposed to open air space, and the bottom, it should be fine. The fan is the only moving part.
I‘ve had mine for a couple of weeks and it runs quite cool and very quiet so as long as it has good airflow around it I would think orientation won’t matter.

Most if not all of these store hundreds or thousands of Mac minis in a vertical orientation. They will not yet have had much time to do so with the new model but I don't envisage a problem.
The most important thing is not to cover the vent, in this case this means not having the back of the Mac mini pressed up against something and not to have so many cables etc. at the back that they obstruct the vent, i.e. keep your cables tidy.
