Any adapter will charge your Apple Watch. The adapter rating is simply the maximum power it can provide, and the device being charged controls how much of the available power is actually taken.

What you need is an adaptor rating which is more than the device being charged can take so it doesnt overload the supply, and a watch is about the lowest demand Apple manufactures. So for example you can charge a watch (demand about 1.5W) with any adapter 2W or greater, and the spare capacity is ignored. If you try to charge a high demand device like MacBook from a low output adapter you’re in for a very long wait if it charges at all.
