First, you will need to follow the steps in the link below to unpair your old Apple Watch. This step will erase all content and settings from your Apple Watch taking it back to factory settings. Before all content is erased, your iPhone creates a new backup of your Apple Watch which can be used to restore your new Apple Watch.
