The stocks which you've selected would be part of your backup, maybe restore your most recent backup to recover them (but note that you'd lose any changes on your iPhone since your last backup).
Edit: If you're syncing Stocks to iCloud, then the parameters would not be in your backup.
I did nothing with my iPhone. Yes, I could restore from a backup which is about one month old.
I was not storing my stock list on iCloud, but I think after I reenter everything in I will start doing that.
My iPhone 8 is working perfectly except, for this glitch.

I'm not sure about that. I've had 3-4 alert tones stop functioning because Apple removed the tone that I paid for from the app store. Level 10s on this board have told me Apple can do this.

No, Apple did not remove the tone that you paid for from your phone. However, tones are not stored on the phone through a reset, so they need to be restored from iTunes.
