I'd try repairing it.
After upgrading to iTunes 5.0 I am no longer able to connect my iPod to iTunes. My problem is related to support article 93716. I went through the article and suggestion 1 didn't work. When I got to the next two suggestions where you need to find the iPod Service it is not there at all. I've also checked in my iPod\bin folder and the iPodService.exe file is there. What is the next step I should take?

Can you find the iPod updater on Control Panel > Add Remove programs?
I'd try repairing it.

I'm at work right now so I am unable to check that.
However, during my un-install/re-install of iTunes I also did the same with the iPod updater.

bump.....
Sorry to keep pushing this to the top, but does anyone have any other ideas? I am unable to put anything new on my iPod and it is extremely annoying.
Well, let's see - I hunted down the article and put a link, so it's easier to see what you're talking about.
here is a link to the article
http://docs.info.apple.com/article.html?artnum=93716
Step 1 is Reinstall iTunes
Step 2 is Disable conflicting System Services and Startup Items
Step 3 is Disable conflicting System Services and Startup Items and reinstall iTunes
Step 4 is Reinstall the COM interface for the iPod Service
I'd try step 4 next
Start > Run > "C:\Program Files\iPod\bin\iPodService.exe" /service
Then boot your PC.

I tried your recommendation and still getting the same service error message

OK, so back to step 2 where you ran msconfig.
You could you find the "iTunes Helper" on the Startup tab.
But you couldn't find "iPod Service" on the Service tab.
Yet iPodService.exe is on your hard drive at C:\Program Files\iPod\bin\iPodService.exe.
Am I correct so far?
I think that means the iPod Service is on the PC, but not registered correctly with the operating system.
Do this
Start > Run > "C:\Program Files\iPod\bin\iPodService.exe" /UNREGSERVER
The Start > Control Panel > Add/Remove Programs > iTunes > Repair
(yes, repair iTunes, NOT the iPod stuff)

Katrina,
You are correct in that I see iTunes Helper in Startup but don't see iPod Service in Service.
I tried "C:\Program Files\iPod\bin\iPodService.exe" /UNREGSERVER and it did not do anything.
When I run the above command is anything supposed to happen? When I ran it absolutely nothing happened.
Edit- Just to make things clear, my iPod is still not being recognized by iTunes at this point.

That is normal, the /UNREGSERVER doesn't give a message, isn't Windows such an abstract lover?
Did you do the iTunes repair after? What happened?

Yes, after running /UNREGSERVER I repaired iTunes and restarted Windows. Still getting error message.
I am out of ideas, other than going back to v4.9.
Thanks for all your help.
Do you know where I could get and exe of 4.9?

"HAHAHAHA"
That's me laughing to calm myself down so I don't throw this computer out the window.
So has you have probably already guessed, rolling back to 4.9 is giving me the same error message. iPodService.exe is still yet to run correctly. If anyone else has any ideas I would much appreciate anything at this point.
My question is could I possibly have a corrupt iPodService.exe file that is re-installing itself. I've tried to re-install the iPod updater several times (which I'm assuming installs the iPodService.exe file, correct me if I'm wrong) and have not been able to get the d@%n file running, which I think is my main problem. I may be way off here, I'm just trying to come up with something.
Any and all help is welcomed!
