ok lets start with BT.
Not all devices will see the Iphone, cause it depends on the services available in each device. I gave example of 2 phones connected. paired and cannot communicate any further. However, my daughter's Nokia and hubby's LG models will not see the Iphone at all with BT. This is not a problem, cause (my conclusion) the Iphone is not meant/neither has the services to offer the other phone. So, I think the other device rejects the connection. Maybe MAC people here will confirm if they can pair Iphone with their Macs. I can pair with my PC (using Belkin BT dongle) but that is far as it goes.
For Wifi, you cannot see the other device (apart from special programs like VNC as mentioned before), cause you are not connected to the other device. you are connected to the WiFi AP (your router, unless your pc is also Wifi AP router as well). if you want to know if you can communicate with the Iphone connected to the same WiFi AP as other machines/device, you can use something simple like "PING" utility. Again check your MAC to see if you have it (I think it does). Hope this explains it. Just ping the Iphone and if all is well you should see a reply on the machine that you pinged from like so:
C:\Users\>ping 192.168.1.101 <--- this is Iphone IP address, which yo can get from General/settings/wifi/<your ssid> touch the blue arrow to see the details of the Iphone connection.
