I'm right handed and have never held any iPhone jammed into my palm the way you have to to reproduce this issue, so it's by no means something "everyone" would experience.
I'm right-handed and right-eared (deaf in left ear) so I always must use it in my right hand when phoning. But when texting or composing an email the phone is in my left hand "death grip" and then the signal was affected. I say "was" because I have mine in a case since yesterday and that totally solves the problem.
This is the one iPhone I'd not use without a case or at least the Bumper; too much glass to break and I find it hard to get a secure grip on it. Plus of a case is that it protects the back from spills when I lay it face down on a table; plus of Bumper is that it exposes the maximum amount of the phone to view (it is beautiful) while still providing a good grip. Either has the plus of keeping the front or back raised above any flat surface you lay it on.
There are numerous articles and videos out there about similar issues with other phones when in the hand (incl. the 3G). For me this is not a deal breaker and the strident emotion I see expressed is really surprising.
