I add fields in contact preferences but they do not appear on existing contacts even in edit mode. Shouldn't they?

Have you gone to Contacts/Card/Add Field and from the dropdown menu selected Edit Template? Then add the field there.
If you go to your card, is the iCloud email address being used show there?
I was upgraded from Hi Sierra to Mohave. Card preference was carried forward from Hi Sierra.
Important to me because I use Group emails and some use my iCloud return email address which I don't want to use.
I think this may be the cause if I have some addresses with iCloud card identified on recipient address card.
Yes. The Cards field is not listed under Add Fields.
