Aftermarket Motherboard to Fit in MacPro Case from 2010-2012
Are there any motherboards, as in modern mother boards, that can fit into the cases used on MacPros 2010-2012, the cheese grater box?
If not, am I being dumb to be suprised?

As per the thread started by X57 here there is a company making a kit to convert PowerMac G5 and Mac Pro cases so that they can be used with PC components i.e. power supply and logic board. The various guides and parts convert mounting a PC style power supply, a PC standard logic board and replace the back opening so as to align the PCIe slots and sockets properly.
There are some people who have done this themselves but this kit looks a lot nicer.
See the suppliers page here. It would make more sense usually to do this with a PowerMac G5 case as they are likely to be cheaper. However the Mac Pro case does as one difference make it easier to mount 2 optical drives. Your choice they do both.
Make sure to also look at their modding accessories for these kits.

Best to ask in the forums for Mac Pros. This forum is for Apple hardware made before 1998 (!) and almost no one comes here.
I will ask the Hosts to move you to the proper forum. If you do not get a link to the new location, use this one:
