What are we supposed to do if we'd like to watch Netflix or Amazon Prime?

I was just told "Safari 12 stopped support for most plugins, to include Silverlight."

Well, so now what? What is the point of using Safari if we can't do what we want to do online?

This makes zero sense to me, does Apple actually want everyone to abandon Safari?

I am running 10.13.6 and I was able to restore an earlier version of Safari by reinstalling the OS. If you are running Sierra, that may revert you to Safari 10. It is something you can try if you want to. Unless an oops happens, the worst case is you will still have Safari 12.

Do a backup, preferable 2 separate ones on 2 drives. Boot to the Recovery Volume (command - R on a restart). Run Disk Utility and select First Aid. Then re-install the OS.

it's not just CNN, but a bug affecting many websites, Netflix, Amazon Prime, some of the major broadcast networks, which no longer us to see any of their videos, shows, movies, etc

Can't make any confirmation of the streaming vendors you mention. We only have a TiVo in our home to record and watch OTA programming. Well, not entirely. We can watch Amazon (non Prime) movies and quite a few other services that can be linked through it. But that's not a PC or Mac, so the issue isn't really the same.

For us, on either of our Macs or iPads, CNN in Safari, only on the Macs, is the only news site we've tried where videos stop at a random point and turns black. No problems at all when visiting the site with Firefox, or using Safari on an iPad.

CNN has their own page for "fixes" with Safari and other browsers experiencing video playback issues. Tried them. They don't work.
