Could I connect a mobile hotspot to an Apple Watch?

I’m wondering about getting the cellular or just GPS model, would a hotspot from my iPhone connect to the watch that isn’t a cellular model?

If your iPhone is in proximity of your Watch, and if there's no Wi-Fi, the iPhone's cellular connection is always being used by the Watch for connectivity (that is true for both the GPS-only and GPS+cellular models). You do not need to use the iPhone's hotspot for this, the Watch and iPhone are already tethered via Bluetooth.
