No option to Back up iPhone on iTunes (Windows PC)

When I connect my phone to my PC, iTunes gives me the options to set up my phone as a new one or restore from a three-year-old backup. The window below is what pops up. What I want to do however is backup my phone as it is now so that i can transfer this data to a new phone. When I exit out of the window shown above, I go to click to my phone where I want to open settings>summary>backups>back up now however the only options I'm given when I navigate to my phone is to play music, movies, TV shows, etc.

I have the latest versions of iTunes and iOS installed.

Use Set up as new iPhone to allow iTunes to connect to the device and back it up. See also Recover your iTunes library from your iPod or iOS device - Apple Community if there is media on the device that isn't in your library.
