You are not playing and recoding Video in any way. All of that heavy lifting has already been accomplished for you. You are moving pre-packaged FireWire files. Thats is the beauty of dealing with a Video recorder that has a FireWire port.
Luckily, iMovie should already be on your Mac. if not, post back for help getting iMovie onto your Mac.

A FireWire device will show up as a drive on your Mac, just as an SD card shows up.
Once you have transferred the files, look to iMovie to edit them for you. Popular camera formats are likely already in place.

But, Panasonic NV-GS27 is a cam recorder with mini DV tapes I have to do an acquisition video, I don't think so I can copy like a SD card
My worry is because my Panasonic is not in this compatibility list https://support.apple.com/fr-fr/HT204202#panasonic

Connect the firewire cable. If you need any adapters, post back.
The files appear as if on a FireWire drive, can be drag-and-drop copied to your Mac, and opened in iMovie.
No device-specific support is desirable or required, The files are in a standard form, and are directly usable.

Last question : I have one tape was not recorded with the same Panasonic, this tape was recorded with an another kind of camera, but the format of the tape is the same . Drag and drop will also work? Or it's working only for tapes recorded with this camera?

You are not attempting to read the DV tapes, you are reading a standard FireWire device.

Transferring Video is very very complicated. If someone had handed you the tape out of the recorder without the recorder, you would be in deep trouble. Getting that data would be really really difficult.
Transferring standard FireWire files (that happen to have standard Video in them) is a cinch ... on a Macintosh. Reading them into iMovie and editing is also pretty easy, but there is a learning curve.
As I have tried to say to you, you are NOT dealing with the tapes or the recorder directly. Support to lack of support for the device itself is of no consequence.
