My Mac Air (mid 2012) has OS 10.10.5, with ITunes 12.8 and is now NOT compatible with phone 6. It says to installl OS 10.1.4 to be compatible. Issue is that OS is does not irk for older Mac Air.

Going backwards won't help. iOS 12 requires iTunes 12.8 or better running on OS X 10.11.4 or better. See How to upgrade to OS X El Capitan - Apple Support for details on upgrading.
