I’ve got ceiling fans that are wired to switches, how do I add that to my home app?

You would presumably either need to find a "smart" ceiling fan and replace your existing one, or you would need to get special smart switches that do what your existing one does. The first step is to do research such as:

If this is beyond you then do as suggested by QuickTImeKirk, get an electrician to do the electrical work.

Contact the manufacturer's support team and check if those fans are supported by HomeKit.
