Hello I was wondering if I could increase my Mac book pro 2017 model : mpxv2 RAM from 8GB to 16GB?

You can not add RAM to that model of MacBook.
You can not add storage space to an iPhone.

Read my response again. You can order a MacBook Pro with specified amount of RAM. But after the computer is manufacrured you can not change the amount of RAM installed.

Like buying more storage for iPhone ?
Not after manufacture and purchase. You can initially order it with more RAM but once built the RAM can not be changed.
