Change default speaker setting on iPhone 7plus

I have an iPhone 7 Plus.

I can’t sync up to my car because my default iPhone setting is permanently set to speaker. How can I turn off the default speaker setting on my phone

There is no default. If you are plug in a headset it will be the source of audio. If you connected a Bluetooth device it will become the audio input-output. That's how the default works. For some apps (like the phone app) you can change it from the screen by tapping Audio. For other apps it is up to the app developer.
