Changing fonts in Safari 12

Just upgraded to Mojave and now Safari 12 is using Times Roman as the default font on many websites I visit. Noticed that the Appearance tab in Safari Preferences is no longer there, so how do I get back the nicer fonts I used to see on websites visited using Safari?

Apple removed Appearance tab from Preferences a while ago.

If an article is Reader ready, you may be able to change the font size and background.

Visit the site. Open the article. Click the 3½ lines Reader button.

Click the Text button and choose an option available from the dropdown.
