Cancelled Migration Assistant, what to do before proceeding w manual migration?

migration assistant stalled after many hours [didn't know wifi not the way to do this]; i cancelled it; decided i'd rather selectively/manually move my nearly 400GB of files, so i can see what's really going on. waiting for usb c adaptors to go ethernet. in meantime, seems like good idea to try to undo whatever migration assistant did to new macbook air. do not know how to do this. very reluctant to 'wipe drive' and reinstall OS [new macbook air did not come with installation CDs and my wifi was too slow for migration assistant, so guessing it's too slow for an OS reinstall? ]

Migration Assistant is slow for reasons unrelated to using macOS Recovery. Your Wi-Fi network throughput itself is very unlikely to be the limiting factor.
