How to turn off WiFi indefinitely

Hello, I use to like the feature of keeping my WiFi off and having the option to turn it on whenever I wanted. Now in 24 hour hours it turns back on?! Now it really interferes with my IoT, my home WiFi, etc. I do not want to place my phone on airplane mode in order to try to “fix” this issue. Will Apple ever give the consumer an additional option to turn it off indefinitely if necessary?

You have always been able to turn it off indefinitely. Go to Settings>Wifi, and turn it off. When you turn it off via the Control Center (as of iOS 11), it is only temporarily turned off, so you have to go to Settings to turn it off indefinitely now.
