I have iMac with Mojave version 10.14.3. What is the best way to update my Adobe Reader? I keep receiving notices about it.

Adobe ended support for Adobe Reader in October of 2017.
It has been replaced by Acrobat Reader DC, but be aware that they will encourage you to sign up for an account, which is not required for functionality.
I assume that it will pop into action when it is needed?
Not necessarily. I routinely use Preview, and only open a document with Acrobat Reader DC when I want to use a feature which may not be available in Preview.
You need to actively make a choice for opening .pdf files with ARDC. Although dated, Take control of how files open still applies to Mojave.
