When choosing different keyboard layouts, what do the different option mean?

That's a much broader question than you may likely think. People in different countries and languages and needs use different keyboards to meet their needs and Apple provides the opportunity to download some of the most standard keyboards.

You can also download keyboards on your device and try them out to see if you may like one more than another. Most of us use the standard Querty keyboard as that's what we've grown up with.

One important function of the keyboard layout on the iPad/iPhone is to determine the spellchecking language. So even when different layouts look exactly the same as far as what is printed on the keys, such as English US and English UK, the spellcheck, autocorrect, and predictive text features will reflect the practice of the country specified by the layout name.


(On a Mac the keyboard layout does not have that function, it is regulated by system preference settings).
