My brother and I share the same Apple ID but I don’t want to see his photos, phone numbers, etc. how do I unsync his phone from mine??

Sharing an Apple ID isn't recommended. Go to Settings/Your Name/iCloud and turn off syncing for the items you don't want to see (Photos, Contacts......).

If one of you wants to get a new ID, there may be some data loss, but you can minimize it. If syncing photos with iCloud, ensure Optimization is turned off in Settings/Your Name/iCloud/Photos and/or in Photos/Preferences/iCloud. Then make sure full resolution photos are on the device/computer. When signing out of iCloud, if asked whether you want to retain data, choose yes. Messages conversations will be lost if they are addressed to the ID. See the article below for other places that the old ID should be removed. While you can't just use the same Apple ID and keep data separate, you can use the current Apple ID to set up "Family Sharing" from here you then need to create new Apple ID's, but they will all be in the same system.
