Presumably, you mean that your iTunes is currently set to automatically import a CD as soon as you close the CD draw, but you want to change this so that you can de-select the songs you don't want to import.
Using the screenshot below to guide you, go to Edit/Preferences/General>When you insert a CD and change the drop-down menu option to Show CD (1.) Make sure also that the Show: List view tickboxes (2.) is turned on
Now, when you insert a CD into your drive, you will see it and have the option of turning off the tick next to a song, which means it doesn't get imported. In the screenshot below, turn off a tick (1.) for any song you don't want, before tapping the Import CD box (2.):
