I'm running Mac OS Mojave, up to date, on a 2015 Macbook Pro with SSD.
The finder will often fail to attribute dates to new files/folders being made (and sorted under my parameter of "Group > Date Added".
The new files get clumped at the bottom under "No date".
I've quit Finder and restarted it, to no avail.
Is there a fix?

Date Added is metadata, not file system data, so it may not get set. Are these files you create in the folder, or are you moving them into the folder with Finder?
The former may not always set the metadata. The latter probably will.
I'm saving things in the usual fashion, to the various folders in Finder I've chosen for things (eg: Photos in Pictures, etc). Nothing unusual.
Sometimes the Finder shows me things as they should be, with "Today" being at the top for things being saved today.
And sometimes it doesn't, and new things I'm saving get clumped at the bottom under "No date".
Interesting concept – it's a variety of sources, from Mojave's screencapping feature, to the newest Photoshop, and Illustrator, and TextEdit. And sometimes just a direct "save" of an image from a browser.
Could *all* those apps be failing on the metadata requirements? I'd find that pretty odd.
It is probably the Spotlight Index.
Certainly, third party apps may not write the metadata, or they may not be triggering an index of he files.
There is probably something interfering with the indexing. Can you find the files?
I've cleaned all my caches (including Spotlight) and restarted ... so far things in the finder look like they should, dates are happening.
I'll notice if/when something goes awry immediately, and if the problem resurfaces.

Since you say you are “saving” them, I would guess that the app isn’t writing the required metadata, or is not updating the Spotlight Index.
