Question

iPhone/iPad backups when traveling on longer trips.

When traveling for many weeks, am I supposed to use public WiFi to backup my iPhone, or hotel WiFi, or AirBnB WiFis. These all seem insecure. I generally never use public WiFi. Thoughts?

I think your fine backing up with iCloud. The backups are encrypted so hackers couldn’t steal anything from the backup anyway. I be more concerned about doing banking, making purchases and things of that nature over public WiFi.
