Why wi-fi if I have unlimited data? We don’t have wi-fi when we are on vacation
I want to backup without wi-fi when we are on vacation. Is this possible?

No. Either backup to iCloud with WiFi or to a computer. You must go to some very remote location if you don’t have access to a WiFi network.
