How do I get rid of "undisclosed recipients" as my name in e-mail?

If it actually got sent as a name, go to Window in the Mail menu and open Previous Recipients. Remove unwanted addresses from that list.

No, when I try to send an e-mail to myself or CC my self it's labeled as "undisclosed recipients"; it's left over from a recent e-mail I sent to a lot of people with BCC.
Are you referring to messages received? Those are being sent to you as BCC in a group message and and won't show your name.
