How do I transfer my information from my old iphone to my new one?

How do I transfer all my information from my old Iphone to my new one? I thought they would do that at the AT&T store by reading the SIM card, but they don't do that

For additional information, the SIM contains nothing but the carrier's information about your phone. The iPhone does not save anything on your SIM. All your information is in the phone and your backups.
