I I’m getting in the email regarding my iCloud storage payment. I want to make sure it is legit. I also do not want to enter my credit card information so that it stays on my phone. Is there an option for a one time payment that doesn’t save on my credit card information on my phone?

You need a payment method registered in iTunes, but this is protected by your Apple ID password (and your phone should be protected by a passcode to prevent unauthorised access).
As an alternative you could buy iTunes Store (not Apple Store) gift cards and redeem them in iTunes.
