To clarify, are you referring to adding/importing subtitles into a movie file? If so, QuickTime doesn't support this process, but you might be able to do this using the Compressor app with the guidance in this resource: Compressor: Work with captions overview

QuickTime Player requires embedded subtitles in the MPEG-4 Timed Text / Tx3g format.

If you add subtitles to a QuickTime file with third party app Subler, then it will convert subtitles file to the correct format.
