I have an ipad pro and frequently have work documents on there . Would like an extra layer of security by being able to lock the app itself or the content within the app- is this possible?

Within iOS there is no way to lock just one app. Make sure you use a passcode on your device, one no one but you knows and you'll not have to worry about someone accessing anything on your iPad. You could use an app such as Dropbox, and sign out of the Drobox app every time you use it and no one would be able to sign into your Dropbox account without your password.
