The rumours of the death of iTunes have been somewhat exaggerated. iTunes is staying exactly the same except for those who install the next version of macOS 10.15 Catalina where the functions will be split between three new apps and Finder, the Mac equivalent to Windows Explorer.

iPods will be updated in the Music app: iOS backups will be carried out in the Finder, which is more logical. This applies only to Catalina: existing systems will see no change.
Syncing operations move into Finder too, but as you say the key point is that this is only happening in macOS 10.15 Catalina.

And which will be the one to keep my iPod updated? And, while we're at it, which will be the one to make backups of my iPhones?
