How Can I Put My Epson Projector In Parallel Mode (Not Mirrored)

I just got an old Epson EB-S12 projector and hooked it up to my MacBook Pro. I've got it so that my screen is now being projected. The problem is I'm using it for VJing, so I need the projector to display the video clips I'm playing, while my laptop displays the VJ software I'm using. In other words, it's currently in Mirroring mode, but I need it in Parallel mode, like 2 separate monitors. When I plugin my external monitor, I get the Arrangement tab in the Display options, but not when I plugin the projector. Is there a way to put it in Parallel mode so that the projector acts like a second monitor, rather than just showing my screen?

MacBook Pro 13", macOS 10.13

usb does not transfer a pure video signal it's a pure (u)niversal (s)erial (b)us for it's data to be interpetated as a video signal a driver is required a driver which the maker of the epson projector would likely have aviable on their site.

if the projector has displayport/vga or hdmi or dvi that should work without any extra software installed
