Can’t update apps
When I try to update my apps it asks for my ex’s apple id password which I don’t know. How do I delete all of these apps without losing my years of data?

If the apps were dowloaded using her ID, then the data in the apps is probably tied to her ID. If you delete the apps, you will probably lose access to the data. Unless you can get her to agree to Family Sharing, you will probably lose your data.
