file extensions for templates

Templates that you create have a .template extension. They are buried deep within a package bundle, so a Finder or Spotlight search will not discover them. If you want to delete or rename them, you can do that directly from the Template Chooser window with a right-click on the user created template.

There is no user orchestrated template folder reorganization (e.g. sub-folders) as the current applications that you mention simply do not support it. One can, at the time of saving Templates, also choose to place them elsewhere, including a folder in iCloud Drive.

If you still want to know where these templates are stored:

~/Library/Containers/com.apple.iWork.{Pages|Numbers|Keynote}/Data/Library/Application Support/User Templates

You can get there via Finder's Go To Folder, and copy/pasting the above path into it.

Here's an image of the path shown as a list.

Open the User Templates folder in finder, using Viking OS X's instructions.

In the title bar of the User Templates window that opens, control-click on the folder icon beside the "User Templates name to view the path list back to your HD volume (and one step further to the name of your Mac).

Click on your Desktop to make Finder current, and press shift+command+G. That will produce the following Go To Folder dialog:

The tilde path that I provided earlier was generic in that it included an alternating choice {Pages|Numbers|Keynote} selection in it. That is not real path syntax, but a hint to choose one of the application names without the curly braces. You can see from the image above that to go to the Pages templates folder, I selected just the Pages application name for use in the path.
