iPhone use in Europe

If I’m correct, my Verizon purchased IPhone 7 can use a international SIM card? Do I need to have Verizon to do anything in order for it to work?

You are correct. Verizon phones are generally unlocked. Check before you go by trying a SIM card from a different carrier. You might also check out Verizon's roaming options. Most US carriers have much better roaming plans than the did a few years ago. I don't bother anymore with international SIM cards. For $10 on any day when I actually use my AT&T phone outside of the US my US domestic plan works. That includes voice, data and text. And when I use its voice over Wi-Fi feature I don't pay anything, not ever the $10. I'm pretty sure Verizon has a competitive plan.
