Automatic Text Correction (e.g., y'all becomes yáll)

I just transitioned from an OS X device to an iPad Pro with the Smart Keyboard folio and am having trouble dealing with what, because I don't know what else to call it, I'm referring to here as automatic text correction.

Here are a couple of examples:

When I type y + ' + a + l + l, what would normally read as y'all on the OS X device reads as yáll.

When I type " + e + n + d + ", what would normally read as "end" reads as a ënd".

Has anyone had any luck disabling this function?

iPad Pro, iOS 12

You are using the wrong setting over at the right edge of settings > general > keyboard > hardware keyboards. Tap there and get rid of the keyboard called " US International PC". Instead use the one called "US" or "ABC".

(US International PC is a special layout which some people like because it makes it really easy to type the accented characters used in various European languages. You have to type a space after ' ` " ^ ~ before certain letters to avoid creating the accented characters)
