I like the fact that I can enter a formula for stock quotes, but confused about update. Does it always show yesterdays's closing price by default?
Is there any way to show current prices while the market is open?

Simply put, no.
MAYBE you could accomplish something through invoking a complex AppleScript, but there's no "setting" to change to make it easily accessible.
