How to convert text to table in Pages 8.x on Mohave

On MacOS Mohave, using Pages 8.1, how do I convert text to a table? Earlier discussions indicate there *should* be this feature (under Format > Table > ConvertTexttoTable), but it does not exist (and hasn't since Pages 5.x).

Has this feature been added/updated? Is it hidden elsewhere? Surely someone uses this feature!
