if if I wanted to backup my iPod touch on iTunes, and then restore from backup will it keep all photo library data such as places, people and memories as well as all the individual photos and videos? Thanks 😁

See About backups for iOS devices - Apple Support. Exact details of what is included depend on whether or not you've enabled iCloud Photo Library. You should really copy off your photos independently of making an iOS backup in case there is ever an issue restoring the backup.
