Can't pair apple watch series 3 to iphone 8

I currently got a new phone so decided to reset my watch to factory mode, as I try pairing my new phone and my watch it states it needs an update and when I press update it says pairing failed and to retry. I have tried everything as in turning on and off my phone and the watch and even did a network reset on my phone. My phone is currently updated as well and I have called Apple and they couldn't find a solution so I have an appointment later this week but it would be nice to resolve it on my own. Can somebody please help :(

Before you got your new phone, did you unpair the watch from the previous phone? I know you reset the watch, but I'm guessing you didn't unpair it from the phone.
