When I want to merge rows or columns. I go to Menu > Table > Merge Cell and UnMerge Cell, both are grey and won't work.

Why? Can you help me? Last year I worked on Numbers and Merge Cell/UnMerge Cell, I used them.

Have you first selected cells in the table and only after you've done that then tried Table > Merge Cells?
Selecting cells first is a crucial step. If you haven't done that, then the options will be greyed out.
(BTW, if you are doing any kind of calculations in your table? If you are, best avoid merging cells as that can result in unexpected results from your calculations. There are almost always ways to avoid merging cells that can provide the same visual effect).
