Hi we are a UK service company, we log service calls within numbers via a simple spreadsheet via postcodes, we are wanting to add a map to the spreadsheet in order to add the postcodes we visit on service calls so we can see the hotspots on the map where we travel to

I suggest, placing a map on the canvas of a Numbers sheet, then add a table where you make the cells whatever size suits your granularity:
Now move the table on top of the map.
Now select cell A1 to add conditional formatting:
select the cell for the area you delivered to, then click the stepper up or down (or type the new value)

You could paste the map onto a sheet in numbers, place a table in front of it with the cells resized to take one post code each, then position and enter the post codes individually 'by hand.'
I don't think Numbers would support any automation.
