On a shared iPad how does the 2nd person check there apple mail

If they want to use the built-in Mail app they can add the account via Settings > Passwords & Accounts, or they could just use a browser. Or do you mean an Apple domain email account e.g. @icloud.com (you can't log into http://www.icloud.com on Safari on an iPad) ?
