How do I call up a document, make changes,, and then do a SAVE AS, change the name of the new document, so that I have both documents saved?

With some apps you can click on the File menu in the menu bar and then hold the Option key which can make the "Save As..." option appear.
If you want Save As back as permanent feature follow these instructions.
Open System Preferences> Keyboard> Shortcuts select App Shortcuts in the left hand column.
Now click on the + button, a small dialogue box should open, next to Application make sure All Applications is chosen
in Menu Title enter Save As… (the three dots after Save As are not periods/full stops, but ellipses, to type these press and hold the option/alt key and press the semi-colon key together) Next to Keyboard Shortcut press Shift-Command-A, press Add.
Save As should now appear in most of your apps File menu.
I usually "Duplicate" and then "Save As."
