transfer info to new ipad

I surprising my mother with a new ipad and I take care of her computer (she's 97!). If I transfer the infor from icloud will it still remain on her old one so I can surprise her??

Delete items on old ipad and give old ipad to someone I got a new ipad, backed up everyting from the old ipad to icloud. Downloaded everything from icloud to the new ipad. Question: I want to give the old ipad to my wife. Can if just delete things she doesn't want and let her use that one?
